Today is my 33rd birthday and even though life is not what I pictured at this age, I can’t help but be so thankful for the many blessings I’ve been given. Throughout this past year I have gone through quite the rollercoaster, but I feel it still showed me just how strong I can be because of what I experienced.
This year has also shown me quite a major shift with friendships leaving and coming into my life. I don’t know what the future holds, but I’m still thankful those friends were in my life when I needed them most. It’s sort of bittersweet, that’s the best way I can describe it.
Last night I spent some quality time with my family. My mom went all out and made me a delicious birthday dinner and the flan that I asked her to make me because it’s my favorite. This is a Puerto Rican flan (de queso) that you really can’t compare to the regular Mexican flan because it has a personality of its own. I don’t know what my mom did this time, but she made it so scrumptious, I was in heaven with every bite. She was even amazed how it came out too.
These little guys are another Puerto Rican dish; mofongo. It’s basically plantain made into little bowls stuffed with ground beef. Yum!
I stopped by Nothing Bundt Cake to pick up my free birthday bundlet! So worth it I tell you!
I got my all time fave Red Velvet and this one has chocolate chips in it, yassss!

So yeah I am a happy young woman who even though people think I’m still in my twenties, I have grown ten times than where I was a year ago. Let’s see what this year brings.
Today I’m working half a day and then heading home to work on my blog because I got some things up my sleeve and I need to make sure I stay on top of it. Then later tonight my bestie Lisa is gonna cook me a birthday dinner at her new place she just moved into.
